Carol Lindgren’s Broiled Parmesan Swordfish

Ingredients

  • 2 pounds Fresh Swordfish Steaks

  • 2 Tablespoons (Tbs.) Lemon Juice

  • 1/2 cup Grated Parmesan Cheese

  • 1/4 cup Margarine or Butter, softened

  • 3 Tbs. Mayonnaise

  • 3 Tbs. Chopped Green Onion (scallion)

  • 1/4 tsp. Salt

  • Tabasco Sauce to Taste (or approx. 1/8 tsp. for a light kick)

Cooking Directions

Place swordfish steaks in single layer on baking dish. Brush with lemon juice. Combine remaining ingredients in a mixing bowl. Broil steaks 6 - 8 inches from heat to your liking or until fish flakes easily with fork. Remove from heat. Spread with cheese mixture. Broil 2 -3 minutes until lightly brown.

** If you prefer to grill the swordfish, do so in your usual manner. Take off the grill and put on a cookie sheet or broiler pan, top with Parmesan mixture, and then broil for 2-3 minutes as stated above just until the cheese is lightly brown.
